Ricotta in Cannelloni and Lasagna

On the menu today is Spinach and Ricotta filled Cannelloni. And since there’s plenty of ricotta to go round (and the oven is on anyway), Pia decided to make some Pumpkin Lasagna as well.
As usual, the cannelloni tray was almost over before we even remembered to get the camera! I’ll might be able to take a shot of the lasagna as it leaves the oven though.
Above are some pics of the butternut squash we used instead of the pumpkin.
Finished the meal with some Chocolate & Banana Cake and some Turkish Coffee (Lebanese).
